Subject: Pellet grill

Just got a pit boss Pellet Grill after saying for years they cost too much, they still cost too much and they are almost 2x the price when I started saying that...

Anyway, I did two briskets yesterday for my sons birthday party. 16hrs, I usually like to use Pecan when I do beef but when I got the grill Lowes didn't have any. So I used to the competition blend.

The few "samples" I took before going to bed this morning were ok, but not great. The briskets didn't get that good flavorful black bark on it like they do when I do this on a Weber kettle. I also didn't have the panic of when the temp goes soaring or crashing.

Good chance I didn't know what I was doing.

Is this normal for a pellet grill?
