we buy a 10# block of cheese, cut it into small blocks, smoke it with Hickory for a couple of hours then Vac seal it one to each Bag, Just before we Vac seal it, each block is dipped in plain white vinegar, then it's stored in a fridge until we run out of cheese,

we do this most time in Jan or Feb. we still have 5 or 6 blocks left, and if we don't dip it in vinegar, it will get mole on it, Smoked cheese is very good with as snack, and goes great with apple, baked potatoes, grill cheese sandwiches, and the list goes on!!
