Central Kansas | You might want to try Pernil…or Puerto Rican fresh ham. We use a regular ham but traditionally a pork shoulder, bone in, is used. We remove most of the fat and then score (1” squares) or cut a slash over most of the ham. Oregano, garlic, olive oil, salt and pepper and either a little vinegar or lemon juice is mixed and rubbed or pushed into scores or slashes. It can be wrapped with plastic wrap at this juncture and left to marinate. Directions vary here. Oven roasted, it will have a wonderful flavor. Worth a try. Wife of an army comrade gave us the recipient in Germany 50+ years go. He was Puerto Rican. | |
