For those wanting to stay low carb, a pork panko (ground up pork rinds) and egg wash can be substituted for flour, corn starch or corn meal.

You can buy it in a jar or simply make your own by putting pork rinds in a blender.

Will not be as thick or crunchy as a flour coating but still pretty good. Paprika for color. My wife also sometimes just fries the chicken skin on till skin is crisp. No coating.
