The milk is priced by butterfat, protein and "other solids" components. Other regions of the US price milk to the farmer a little differently.


Here in Virginia, milk is priced on pounds of butterfat and pounds of skim. Protein and other solids aren't factored in at all. Basically everything is going for fluid milk.
