I won't put alfalfa on a field with a ph less than 6.5, the seed is too expensive to risk a poor stand IMO. Id swap the alfalfa for clover and trefoil if you can't easily get lime there. It's not ideal but id be more confident you'll get a good crop.

Most types of manure are fairly alkaline as well, some more than others. I've known people who have had to throttle back on liquid dairy manure because they were getting too high but i don't know if id rely on it to reliably raise PH levels.
