What is the difference in USDA prime beef and Canada prime beef? The reason I am asking is that on two different occasions I have smoked briskets, one of each, from Sam’s Club and there was a notable difference in the marbling and end product. Both were good, but the Canada prime was quite a bit drier from the lack of marbling. Is this a coincidence or are the grades actually different?
