I used a Chargriller offset smoker for years. Cooked a lot of BBQ on it!
I could never really fine tune the temp. I came to the conclusion mine was not tight enough. Basically, I controlled the temp by the size of the charcoal pile.
One thing that helped me was putting the grates in the side box and burning the charcoal on the grate and not the little wire charcoal thing at the bottom of the side box. This lets air under the charcoal.
After two chargrillers and lots of years I moved to a Masterbuilt gravity feed charcoal grill / smoker.
