I had an offset smoker. Built into a bank in the ground and burnt wood. I would soak the flavoring wood and put right on top of the wood. It would cold or hot smoke. The brick fire box was in the ground and the smoke box was above the ground in a wooden box. I smoked a lot of salmon in it. Made great venison and elk jerky too....James
