They should pay you to graze under the panels, they’re going to need to do vegetation control somehow. Chemicals and mowers for 500 acres aren’t cheap. It will take a lot of sheep to keep 500 acres trimmed, and you’ll need a plan for winter feed and extra help at lambing time.
Sheep can be more profitable than cattle if you can keep them alive and have cheap feed (preferably free, or better yet negative value). Don’t underestimate how hard it can be to keep them alive, though for starters the chain link fence around most solar projects would be a big help.
