Nice looking stuff there. That looks like what we used to do, but with a swather or an old gizmo bolted to the bar on a sickle mower that swirled the oats into a wind-row.

I know Poverty is correct about the boot stage for optimum nutrient value, but we always felt the extra tonnage from waiting was too tempting. We also found boot stage oats to be tricky to hit the right moisture for a bag. It could be sour and unpalatable if on the wet side. Likely just poor management.
