I wonder if cooking is not the only processing that causes problems. Any process that removes nutrients and concentrates carbs is not good. I have read many times that pigs are a good lab animal because: 1) they are cheap and easy to reproduce.2)they have a digestive system similar to Humans3) they have a weight range similar to Humans. In my barns if the pigs had trouble with ulcers one remedy used was to increase the particle size of the feed grind. They never did that any longer than they needed to because it hurt feed efficiency. I we could decrease our feed efficiency people would be a lot better off.
