Subject: Food working

Lenawee Co Michigan
While at the local Chinese restaurant today I had an entrée that tasted bad, so when leaving I told the Chinese cashier that the dish was working. She couldn't understand what I meant, and I figured it was because she didn't grow up in the states.

Now looking it up online I don't see a definition for the work 'working' or 'werking'. It used to mean the changing of something from sugar to alcohol due to time and fermentation. Was this just a local word for fermentation or is it's use so old nobody remembers it?
