Re: your experience: in a restaurant, I would not tolerate what I sense is bad. Restaurants( not just oriental) are a major source of food-born illness. My mother was food-service manager for a school district. Dealt with all the regional food salesmen who also sold to restaurants. Too many of them told her of “ highly-regarded” restaurants that were pig-styies in the kitchen. Too many of like reports from varied sources for it not to be true. Not sure if the majority of it is lack of training, laziness, or management-faulted. Fast-food-by nature-almost always is cleaner: freezer to hot oil or grill:
