Alright I found it; Marriam-Webster lists the word fermentation as a synonym for working.
Another place has 6 synonyms for fermentation:
Agitation
Dissolving
Ebullition
Evaporation
Leavening
Souring
This must have been a local use of a word I picked up on as a kid when someone said "The mash is working"
