I was in the same boat more or less last year. ALWAYS let the cows have access to salt/mineral, wether free choice or limit fed daily, roughly $50/yr/cow in mineral. I let them clean up the stalks for a few weeks before I started feeding some hay, let the manure tell you what they need. Alfalfa is going to be the cheapest and easiest protein source.
