Some pellets don't smoke. The pitboss competition blend is decent and available. You can get real mesquite pellets in San Antonio. They make more ash, start clean and you can smoke 6 hours or so before it builds up too much, or about time to wrap and throw in the oven. Other "mesquite" pellets are just "flavored".
