Last week I got the old homemade smoker grill back in better working order. It has a small wood box feeding in on the side for smoke and some heat. A small gas burner in that box to get the wood going. Then under the cooking area under a layer of lava rocks a furnace burner the length of the grill with a shield over it to keep drippings off. I have been wanting to cook a beef brisket so after getting the grill working better I was brave enough to try one. The ones I had been seeing in the grocery stores were all about twice as big as I wanted to buy. Neighbors that raise and sell their own beef through their farm supply store had one that was smaller than what we were finding in the grocery stores. We did the brisket, a Boston button and pork chops for supper. Cut the small thin end of the brisket off to sample before we were done cooking and it was really good. Those pork chops were also good. So I have our 4 th of July meat ready.
