Plumb the new well directly to the house, and give it its own pressure tank and switch. Eventually replumb the water-trough line directly to the house as well, so you have two incoming lines and one outgoing line through the basement wall.

This will give the maximum flexibility. One well can be off-line due to problems, and you can run on the other well. The better-tasting well can feed the house, and the higher-capacity well can feed the water troughs.

Most of the other ideas are depending on underground valving, which even with our shallow 18" bury depths, is trouble enough. I can't imagine wanting to bury a valve four feet down, and hope it doesn't leak or seize up. Instead, my method keeps all the shutoff valves in the house basement where they belong.
