We were at $12 for a 20lb seedless and $6 for seeded the same size.

Holy smokes. We get $6 for seedless melons (Fascination and Crackerjack in 16-20lb size) and $4 for seeded melons (Jade Star). Don’t have problems selling the seeded and most go to food service. The seeded melons are popular, but do have to be discounted. They taste better than seedless (any variety). Most of seeded are served to employees and seedless to the public at the restaurants and food service we sell to.

Your prices would not move any melons here.

When I used to go to markets we would cut up a seeded melon and offer samples. That always moved them, but they were cheaper than seedless. Yellow flesh is a curiosity and you have to have a demand. I would suggest starting small one year and see how they sell. Just enough that if they don’t sell you can east some and won’t feel bad about the trial.
