A blade of blue grass into a tree would work.

Although I know you hate to admit it breeding a better cow or a pig with more lean meat, a chicken that grows faster less feed is all evolution.
Evolution that happens because of a force which rewards changes by greater reproduction
In the case of livestock breeding the force is humans but it is evolution that is happening.

Other environmental forces lead to changes too and if you add millions of years the changes add up to big changes resulting in different species 

Now that blue grass into a tree would require magic (or at least many millions of years with an advantage of the change happening) and I don't think there has ever been any evidence of magic like that happening.
