Rivers, MB | not very familiar with your US wheats. Does a hard red winter wheat look different than a hard red spring wheat? Up here in Canada, so far at least, hard red winter and hard red spring wheats have to look different before the variety can be registered. THat might change soon, but so far that's what we have. If you took some 13.5 protein hard red winter and 13.5 pro hard red spring, would the flour be any different?
What prevents you from selling hard red winter as hard red spring wheat that has a little lower protein? | |
