I think you summed up pretty well that the cattle shouldn't unfairly be held off feed and water, then stuffed before weighing. I would do my best to try to keep the feed schedule as familiar as possible for the cattle.
Those truckers should have packed a lunch and ate on the road. Cattle on the truck need to keep rolling to where they are going as much as possible.
