The concept is good but there are issues to work out.  One, most dairies only want you to raise their calves only.  This would be from a health stand point. With the first issue comes the second. Now you're screwed if you build buildings etc. and the dairy decides to change plans and pull the calves from you.  It would be hard to find the next dairy to fill in quickly.
