I agree completely with you about the food preparation at todays fast food joints....however, I can say that the funeral lunches I was referring to took place in the same town as the Arby's so there was very little transportation of the meat. The meat was placed directly into big roaster pans (the kind you can plug in and adjust the temp) and kept warm during serving. Like you said, nothing beats food prepared by ladies who really know what their doing.
