Evaporation is evaporation regardless of the heat source. Floor heat is just going to evaporate the water faster than forced air.

With spray foam, you will likely need some sort of exhaust fan or some way to vent the moisture. Our house is foamed and even with 20% humidity we get condensation on really cold days.

That said, dad has floor heat in his car wash and the doors don't freeze. So I have my doubts it would be an issue in your garage. I do know from experience that floor heat will prevent doors from freezing down where forced air can leave them froze down in the right conditions.
